Cat Saddles are the meat from the main body of the cat, including the loins, flap meat and other meat from the torso. Cat saddle meat is especially tender, with a mild and easily adaptable flavor. Try wrapping the saddle in our Kitty Bacon before roasting to keep it moist or braise. The meat can also be cut up for sautees or ground for sausage and sauces.
